You can turn off ip logging when posting:
AdminCP > Vbulletin Options > Message posting and Editing Options > Log IP Addresses > Do not log IP.
Apart from that, the only solution i know to really remove ALL ip logging, is the special version vb 3.6 from GYNS.
I'm too looking for a mysql option to remove ips already logged...
