I wonder if anyone may be able to shed some light on the following search engine differences?
My website www.for-rent-nerja.com is 1 year old, has a pr2 and ranks well in the .com extensions of Google, Yahoo and Bing. It doesn't, however, rank well in the .co.uk extensions! It does rank, just not as well! Why would it differ so greatly?

It is because you don't have a good no. of backlinks from the local sites of United Kingdom.
Try building those links especially from the .CO.UK sites and you'll see the difference. like Xubair mentioned you need to have links from the same domain as the country you are trying to rank in.
