so i can test out diff colors and as of now I only have the orange to play with. Make any sense?

Changing the header color would require you to change the theme's css to match, and unless the style author provided a psd with alternate color choices, it'd all be custom design on your part.

Aside from that, simply saving a flattened image to PSD does not create layers. You'll still have to create the bevels, shadows etc. before you have something you can work with.
